Happy Thursday, my badass blogitarians! I hope all my American readers had a fun, safe holiday yesterday, and everyone else had a great day! I celebrated America’s birth by watching My Hero Academia with my husband, playing Sims 4, and whipping up some f***ing AWESOME nachos. The twist? It’s my very own, Claire original recipe! No links here! So don that apron and let’s make a batch of what I call “America: F*** Yeah!” Nachos!
Of course, me being me, I had to substitute on my own recipe ’cause I forgot to buy fajaita (that’s right — faJAIta) seasoning, which is a devilish detail one simply should not miss. However, since I did, I used Cajun seasoning instead, which proved to be quite tasty. They’re not bullshitting when they say that spice goes great on everything, and as it is written in my book Daily Bread: Provisional Proverbs for the Short-Order Chef (publication pending), “Thou shalt always season thine meat.”
Living in the southwest, I’m spoiled by the plethora of fantastic salsas and picos available to me. I put a link to one of my favorites in the ingredients list below, but since these are for you and you know what you like do whatever the f*** you want. I’m not paid to advertise, so make it yours, baby!
A quick note on the cheese: I always recommend you grate your own if you can — don’t buy that pre-shredded shit. They put cellulose in there to keep it from clumping together, which is derived from wood pulp and in my opinion makes it shittier. So if you want wood-free nachos, shred that shit yourself. I have a fancy food processor that makes it hella easy to shred cheese, but if you don’t have one of those I don’t blame ya for getting the pre-shredded. Just some food for thought.
Enough preamble! Let’s get to the goods!
1 bag Salsa Verde Doritos (or whatever kind ya like, really)
2 pounds ground beef
1 can favorite salsa/pico (I love this one. I literally drink this shit.)
8oz sour cream
2-4 Cups Mexican Blend cheese, shredded (I didn’t measure — sorry not sorry. It’s at least two cups. If you like more cheese, get more)
1 packet fajaita seasoning (McCormick’s the shit)
4 green onions, chopped
1 package guacamole
Some good tunes (I listened to this as I made these — gotta love RATM!)
Beer (for drinking)
WTF To Do:
Preheat oven to 375.
Set a burner to medium-high heat and warm up a large skillet. While that’s heating up, take your ground beef and season it with salt, pepper, and the fajaita seasoning and make sure it’s well-blended. Once your pan’s hot, throw that beefy bidness in and cook till browned.
While your beef be sizzlin’, get a lasagna pan and coat it with some nonstick cooking spray. Take half the Doritos and make a nice blanket at the bottom of the pan.
When your beef’s done drain that shit, then put half of it over the top of your Dorito layer. Top with half of the cheese.
Pro Tip: When cheesing, make sure you can still see the chips and beef in between the cheese. Too much cheese can overwhelm the dish, but if you like a f***ton of cheese just ignore me. Keep in mind there are two layers of chips, meat, and cheese.
Stick that shit in the oven for seven-ish minutes, then check on it. Cheese should be a bubbling beauty. Once that happens, yer DUN! Pull it out and toss your green onion on top. BAM!
Just look at that ooey gooey goodness. My GOD, it’s gorgeous!
Now, just stick your salsa/pico, sour cream, and guac on as you please! My husband and I like our nachos differently, which is why I leave this open to interpretation. Here’s my plate:
BAM! “America: F*** Yeah!” Nachos. Easy and delicious. Great pairings include beer, margaritas, and more beer. A squeeze of lime wouldn’t be remiss, either.
